Getting geared up for St. Paddy's with Guinness Chocolate Cake!

This is an epic way to celebrate any occasion, especially St. Patrick’s Day! We used Guinness for this but you can use any dark stout or porter. As you can probably guess, the beer that we suggest to pair with this is a stout… we of course chose the mighty black stuff!6154511Serves: 8 | Prep time: 10 mins | Cooking time : 1 hourWhat you need for the cake:1 cup of stout or porter2 1/2 teaspoons of baking powder2/3 cup (150g) of butter or margarine3/4 cup (100g) cocoa2 cups (220g) of plain flour1/4 teaspoon of salt1 tablespoon of vanilla flavour1 1/2 cups (350g) of caster sugar3/4 cup (170g) of sour cream2 eggs1/2 cup (100g) of light brown sugarWhat you need for the icing2 cups (220g) of icing sugar1 cup (250g) of cream cheese1 teaspoon of vanilla flavour1/2 cup (100g) of butter or margarineOur recipe on how to cook with beer, Guinness chocolate cake for St Patricks Day.Directions for cakePreheat the oven to 180°C/ 350°F/ Gas mark 4 and grease a cake tin with butter.Pour beer into a saucepan and add butter. Simmer until the butter melts.Add the cocoa powder, light brown sugar, caster sugar and whisk together. Take off the heat and leave to cool.Beat the eggs, sour cream and vanilla flavour together, then add to the butter-beer mixture, then whisk well.Whisk the flour, baking powder and salt together. Add to the beer-butter mixture, then whisk well.Pour into the cake tin, then give the pan a few taps to get out any air pockets.Bake for 1 hour and allow to cool.Directions for icingBeat the cream cheese and butter together until smooth.While mixing, add the vanilla flavour, then add the icing sugar slowly until your mixture has reached your desired thickness.Spread frosting on cake.Grab a pint of Guinness and enjoy!
