Apple Brandy

There's quite a few different names for the drink produced from this 'technique'. I think that it drives from the process of making the French brandy Calvados, it is also known as applejack but whatever you want to call it, it is dead simple!The science side of it is pretty basic too. Alcohol has a lower freezing temperature than water, so this allows the alcohol to become a liquid while the water in your homebrew is still frozen. So, I won't over complicate things ... All that you have to do it whack it in the freezer. Once frozen, let the dark stuff seep into a bowl for about 15 minutes. For every 1 litre you freeze, you should get about 300 ml of brandy.
